How to make Broccoli Soup………
Broccoli soup is a very famous soup which is cooked with the puree of broccoli and milk. It is a creamy soup and very good for health. It is having zero sugar value and low cholesterol, low fat. This is incredibly easy and quick recipe. Soups can be made in both forms Veg soup and Nonveg soup. Here I am showing you the steps of making broccoli soup.
Ingredients for making broccoli soup recipe:-
• Water 1.5 cups
• Broccoli 250gms
• Onion (प्याज) 1 small finely chopped
• Fat-full milk 1.5 cup
• Black pepper (काली मिर्च) 1/8 teaspoon
• Butter 2tbsp
• Pinch of nutmeg powder(जायफल)
• Olive oil (जैतून का तेल) 2 tablespoons
• Garlic(लहसुन) 2 clove, crushed
• salt to taste
• Dry oregano or your favorite herb ¼ tsp
• All purpose flour or wheat flour 1 to 1.5 tbsp
Method of making Broccoli soup:-
First chop the broccoli in medium size pieces. Then take a pot add 5-6 cups of water, bring water to boil vigorously and turn off the flame and add broccoli pieces. This method is done to remove insects from the broccoli. After 15-20 seconds drain broccoli from water.
Take a sauce pan heat it with butter adds garlic and onions cook for 1 minute. Then add flour stir it and cook for 2 minutes at low heat.
Then add drained broccoli, save some pieces for garnish, mix well and add water cover the pan with lid and simmer for 6-7 mins. Stir in between to avoid sticking and also check.
Let the mixture to cool when it is slightly warm blend it to make smooth puree. Take another pan heat milk don’t boil it and add to puree, stir.
Pour the mixture into a pan, add oregano .Reheat soup gently don’t boil it with occasional stirring. Then add a nutmeg, salt, pepper and turn off the flame.
Serve with style….!
Your delicious broccoli soup is ready to serve. You can serve it hot.Garnish it with broccoli pieces.
