HOW TO MAKE KADAI PANEER
Kadai paneer is the most popular recipe of Indian and Punjabi food culture. It has exotic taste because of the combination of onion, capsicum, tomato cooked with traditional spices. It is basically a main course dish and is the pride of important events. This is the most easy and quick recipe to prepare. If you want to impress your guest with north Indian recipes than kadai paneer is the best choice to cook as it is having superb taste of spices with capsicum.
Ingredients for Kadai Paneer Recipe
• Coriander seeds (धनिया के बीज) 1 tablespoon
• Dried red chilies (सूखे लाल मिर्च) 4, broken and seeds removed
• Paneer 250 grams
• Oil 2 tablespoons
• Onion (प्याज़) ½ cup, finely chopped
• Garlic paste (लहसुन) 1 tablespoon
• Tomatoes (टमाटर) 2 ½ cups, finely chopped
• Tomato for puree 1
• Garam Masala 1 teaspoon
• Dried fenugreek leaves (सूखे मेथी पत्ते) 2 teaspoons
• Salt to taste
• Water 1 cup
• Capsicum (शिमला मिर्च) ½ cup, cubed
• Heavy whipping Cream (malai) ¼ cup
• Coriander (हरा धनिया)

Method of making kadai paneer
First take a pan dry roast coriander seeds, kashmiri red chilli and green cardamom until nice aroma releases for a minute over low flame. Turn off flame and grind them in a grinder to make smooth powder and keep aside.
If using frozen paneer, defrost the paneer before cooking by placing paneer cubes in hot water for 7-8 minutes to keep them soft. Drain them and keep aside.
Take a pan heat it with oil or ghee over medium flame. Add chopped onion and saute until it turns translucent.Add ginger-garlic paste and red chilli powder and cook for 2 minutes.
Add chopped tomatoes and cook it till the oil starts separting from the sides of the pan or for around 4-5 minutes. Add crushed spices powder made before,mix well and cook for 2-minutes.
Add chopped capsicum and salt, cook for 2 minutes.Crush dried fenugreek leaves (kasuri methi) using your hand and spread over the curry.Add 1/3 cup water and cook for 4-5 minutes.
Finally add paneer cubes.Mix it well and cook for 3-minutes. Add fresh cream mix well and turn off flame. To avoid curdling do not cook longer after adding cream.
Serve with style…!
Take a bowl and pour the prepared curry into it.Garnish it with coriender leaves and sliced lemon.
