HOW TO MAKE PANEER KOFTA

Ingredients for Paneer Kofta Recipe
Kofta preparation :-
• Paneer grated 200 gm
• Potatoes, boiled, peeled and grated 2 medium
• Green Chilli, finely chopped 1
• Grated Ginger (अदरक) 1 inch pieces
• Lemon Juice 1/2 teaspoon
• Green coriander (हरा धनिया) 2 tbs finely chopped
• Corn Flour ( मकई का आटा) 1½ tablespoons
• Cashew nuts (काजू) 6-8
• Salt to taste
• Oil for deep frying
• Paneer 250 grams
• Oil 2 tbs
• Onions (प्याज़) 1 medium sliced
• Ginger (अदरक) 1 inch pieces
• Garlic (लहसुन) 3 pieces
• Sugar ½ teaspoon
• Water 3/4 cup
• Tomato (टमाटर) 2 big size
• Green chilly (हरी मिर्च) 2
• Cashew nuts (काजू) 7-8 soaked in water 20 min
• Green coriander (हरा धनिया) 2 tbsp
• Red chilly powder (लाल मिर्च पाउडर ) 1/2 tsp
• Turmeric powder (हल्दी पाउडर) ¼ tsp
• Coriander powder (धनिया पाउडर) 1 tsp
• Cinnamon Stick (दालचीनी छड़ी) 1/2 inch
• Dry fenugreek leaves (सूखी मेथी पत्ते) 1 tsp
• Salt to taste
• Garam masala ¼ tsp
• Cumin seeds (जीरा) 1/2 teaspoon
Method of making paneer kofta
Take a large bowl put grated paneer, corn flour, grated potatoes, ginger, lemon juice, green chili, coriander leaves, salt and mix them to make a smooth mixture.
Make stuffed kofta balls. Grease your palms with oil then take a portion of mixture roll it to give shape of a ball. Take one ball and press a little between your palms to flatten it put 2-3 pieces of cashew nuts in the center. Wrap them in from all sides and give round shape of ball. Prepare remaining in similar way.
Take a frying pan and heat it with cooking oil as it gets medium hot slide the balls in the pan and fry till it turns golden brown. You can do it in the batches of 3-4 balls. Make sure that oil is hot enough otherwise balls may break and split in the oil. Drain and transfer the balls to a plate.
Take tomatoes and grind them to make puree.Also take some cashew nuts with 2 tbs of water and make paste.
Take another pan heat with cooking oil over medium flame. Add cumin seeds, as they start to crackle, add cloves and cinnamon. Add crushed garlic-ginger and cook for 10-20 seconds.Than add chopped green chilli, onion and cook till onion turns light brown.
Add tomato puree to it and cook till the oil starts to separate from the sides of the pan. Add cashew nut paste, turmeric powder, red chilli powder, coriander powder, garam masala powder, sugar and salt.cook it for 2 minutes.
Add kasuri methi and 1/2 cup water and cook the gravy for 4-5 minutes to get the desired thickness. Add prepared stuffed Kofta balls, mix well and turn off the flame.
Serve with style…!
Take a bowl and pour the prepared curry into it.Garnish it with grated paneer and cashew nuts.
