How to make Schezwan Noodles
Schezwan noodle is the classic dish of the Chinese cuisine. It is mouthwatering dish served as cold salad noodles .The noodles used are water noodles which are fresh noodles with soda and have slightly yellow color. Schezwan noodles are very easy to cook and have delicious taste Here I am showing you the steps of making Schezwan noodles. This is a very popular noodle recipe. Noodles are available in both forms veg Schezwan noodles and Nonveg Schezwan noodles.
Schezwan Noodles Ingredients:
- Fresh thin noodles 1 pkd
- Rapeseed oil or sesame oil 2 teaspoons
- Soaked soya beans(सोया सेम) 1 small cup
- Oil for frying
- Cucumber(ककड़ी) 1 shredded
- Chopped spring onion (हरा प्याज)
- Boneless chicken breast 1 small chunk
- Schezwan peppercorn seeds 10 whole
- Green onion (हरी प्याज) 1
- Ginger(अदरक) 2 slices
- Salt to taste
- Chili oil
- Schezwan pepper powder 1 teaspoon
- Red chili pepper powder(लाल मिर्च पाउडर ) 1 teaspoon
- Anise 2 star
- Vegetable oil 3 tablespoons
- Smashed garlic (लहसुन) 3 cloves
- Soya sauce 2 teaspoons
- Salt to taste
- Vinegar (सिरका ) 1 tablespoon
- Sugar(शक्कर ) 1 tablespoon
Take a deep pan and add water to it, as water brings to boil add 1 tsp of oil and 1/2 tsp of salt.
Add noodles to the boiling water. Stir it in between to prevent the noodles from sticking. Do not over cook the noodles. Check the noodles by tasting. It should be firm but not hard.
Drain the warm water from the noodles by strainer and run cold water over it to avoid sticking together.
Method of making Schezwan noodles
Step 1: Soak soya till they get double in size. Transfer out and drain with towel. Peel the cucumber and then slice into shreds.
Take a pan heat it with cooking oil and add soaked soy beans to fry until sound comes out. Take soy beans out and set to cool down.
Take a large pot, put chicken meat, slices of ginger, Schezwan peppercorn s and spring onion into it. Bring it to boil and then keep cooking for 5 minutes. Cover it with lid and cook for another 10 minutes until the meat is completely cooked. Soak in cold water and shred with hand.
Take a small bowl put Schezwan peppercorn powder, chili pepper powder, 1 star anise, 2 slices of ginger and keep aside. Then take a frying pan add 3 tablespoons of vegetable oil and heat it. Add 2 slices of ginger and 1 star anise until the oil gets really hot. Add ginger slices and star anise to the oil and pour it slowly into the bowl with the spicy powders (kept aside before).
Take cooked noodles and add rapeseed oil in the noodles and mix well. Then transfer it to the mixing bowl and add chili oil, salt, vinegar, sugar, garlic, shredded chicken meat, soy sauce, chopped spring onion and shredded cucumber.
Serve with style….
Garnish it with green spring onions and fried soya beans.
